PROBLEM TO BE SOLVED: To provide an oil-in-water emulsified composition having excellent flavor, enabling much dietary fiber to be taken because of containing alginate as water-soluble dietary fiber, capable of suppressing aggregation or scorching due to the heat denaturation of a protein produced during undergoing sterilizing treatment, in particular, TST sterilization or UHT sterilization (ultrahigh- temperature instantaneous sterilization) even if decreased the use of various kinds of sequestering agents, and causing no contamination of scorched products or aggregates into the product. SOLUTION: This oil-in-water emulsified composition comprises water, oil and fat, milk protein and/or yolk protein, low-viscosity alginate, and calcium. |
