PROBLEM TO BE SOLVED: To obtain a dressing-type basil oil capable of preventing discoloration of basil and preservable for a long period of time, and to provide a method for producing the basil oil. SOLUTION: This method for producing basil oil comprises the following processes: washing basil (step 1) followed by roughly cutting only basil in a first cutting process (for example, into the size of 5 mm square, step 2), cutting the thus rough-cut basil into fine pieces while mixing the rough-cut basil with common salt (step 3); meanwhile garlic is subjected to saute with olive oil at the relatively low temperatures (100-110 deg.C) for the predetermined time (for 20 min) so as not to be scorched (step 5), and thereafter further adding olive oil to the thus obtained garlic saute, cooling it down to the predetermined temperature (60 deg.C), and then mixing the above-prepared basil into the thus treated garlic saute. |
