PROBLEM TO BE SOLVED: To provide a method for efficiently executing blood discrimination in eggs at high speed under little influence of optical absorption by eggshells. SOLUTION: The absorbance by the egg of light having the wavelength around 578 nm (578 nm absorbance), the absorbance of light having the wavelength around 623 nm (623 nm absorbance), and the absorbance of light having the wavelength around 643 nm (643 nm absorbance) are measured, and the degree of blood in the egg is calculated according to the following formula (1), and the degree of blood content in the egg is compared with a reference value determined beforehand to discriminate whether the egg has blood or not. Degree of the content in the egg = 0.4789 (578 nm absorbance - 623 nm absorbance) - 0.8779 (643 nm absorbance - 623 nm absorbance)...(1).
