The installation comprises an evaluation station for the grade of each fruit article. There are two pools filled with water (20) which receive the fruit according to their grade. A conveyor transports the fruit from the grading station to a pool corresponding to their grade. Each pool comprises a temporary storage (24) of the fruit in several superposed layers. The storage comprises submerged vertical walls (42,44A,44B) forming a closed contour which delimits a temporary storage space and a sleeve (50) for forced immersion of each article in the space.
