TREATMENT PROCESS OF CITRUS JUICE IN NATURA FOR BULK STORAGE

Treatment process of citrus juice "in natura" for bulk storage, comprising the steps of: submitting the juice to an effective pasteurization, followed by chilling to a preservation temperature close to the freezing point; aseptically conducting the effectively pasteurized juice to at least one tank of bulk storage, which has an aseptic internal environment pressurized with an inert gas; and maintaining the juice stored at said preservation temperature. In case transportation occurs between the extraction site located far from the storage site, the juice is previously submitted to a slight pasteurization, chilled to the preservation temperature and transported in this condition to the effective pasteurization step.
