The present invention relates to a readily dispersable composition that includes an aminopolysaccharide and a negatively charged polysaccharide. An aminopolysaccharide and a negatively charged polysaccharide such as xanthan gum, guar gum, alginic acid, carrageenan and pectin are blended together to form particles of chitosan coated with the polysaccharide. The composition may optionally contain food flavorings, dyes, vitamins, minerals, and/or phytonutrients. |
