The invention relates to a method of extracting water from a water-containing product that is in contact with air of a first temperature circulating in an at least essentially closed drying chamber (30), wherein water vapour is emitted by the product and enriched in the circulating air. The method is characterised by compressing water-enriched air, therewith raising its temperature, by cooling the compressed air by an exchange of heat with the air in the drying chamber (30) or the air in another drying chamber, wherein water condenses out as a result of said cooling process, and by separating the water condensate from the cooled compressed air and expanding the cooled air and returning the air to the drying chamber (30) and carrying away the water condensate. The invention also relates to apparatus for carrying out the inventive method. This apparatus includes a compressor (1) having an inlet for air of a first temperature, and an outlet for compressed air of a second temperature. The apparatus includes a heat exchanger (4) that has a compressed air inlet which is connected to the compressor outlet and to an outlet for water-phase condensate and compressed air respectively. The apparatus further includes a liquid separator (6) having an inlet for air cooled in the heat exchanger (4) and the water-phase condensate respectively, said liquid separator (6) having a water-phase outlet and a condensed air outlet, and further includes an expansion device (11) which is connected to the condensed air outlet of the liquid separator (6). |
