摘要 PURPOSE: Provided is a method for manufacturing noodles using bamboo shoot, natural edible fiber. Therefore, provided noodles prevent constipation and fatty liver, and remove hangover. CONSTITUTION: Bamboo shoot contains choline and betaine which prevent fatty liver and remove hangover. The manufacturing method comprises the steps of: selecting bamboo shoots of less than 30-40cm then followed by washing and cutting them; boiling cut bamboo shoots at 100 deg.C then pulverizing edible fiber into a size of 100-150 mesh; and adding pulverized edible fiber to noodles, wherein the edible fiber is manufactured into lyophilized powder.
