PURPOSE: A method for processing an ostrich leather and an apparatus for removing fiber texture of the same are provided to neatly remove muscular fiber texture adhered to the back surface of the sheet without damage of feather marks projected on the front surface of a sheet of the ostrich leather, thereby manufacturing a product using the fiber texture removed leather sheet. CONSTITUTION: The method for processing an ostrich leather comprises a manufacturing step of an ostrich leather sheet manufacturing an ostrich leather sheet(10) on the front surface of which feather marks(11) of an ostrich are prominently formed and to the back surface of which muscular fiber texture(12) of the ostrich is adhered; a removing step of the fiber texture removing the muscular fiber texture(12) adhered to the back surface of the ostrich leather sheet using a fiber texture removing apparatus by temporarily adhering an elastic plate(20) made of cushion material having the same size as the sheet to the front surface of the ostrich leather sheet(10); and an adhering step of a supporting plate adhering a supporting plate having the same size as the leather sheet(10) to the back surface of the elastic plate(20) so as to maintain the shape of the leather sheet(10) after separating the elastic plate(20) temporarily adhered to the front surface of the fiber texture removed ostrich leather sheet.
