PURPOSE: A process for continuously preparing extruded noodles having excellent restitutive force, uniform qualities and taste peculiar to extruded noodles is provided, which increases productivity, stabilizes quality, is convenient to cook, and can produce the product in an effective packing unit coincided with the distribution system. CONSTITUTION: The feature which characterizes the process includes the steps of: mixing noodle material; adding water to the mixed material and kneading under ordinary pressure or vacuum; extruding a dough sheet through a single shaft or twin shaft extruder; cutting into noodle strips; increasing the cutting speed of the noodle strips more than a conveyor speed to give a wave form to noodle strips; and boiling. |
