PROBLEM TO BE SOLVED: To provide a method for thawing a frozen food while keeping the quality of the food good. SOLUTION: This method for thawing the food comprises a first step S1 of isotropically pressing the food to be thawed, frozen at the temperature T1 deg.C lower than the temperature T0 deg.C which is the freezing temperature of the food to be thawed under atmospheric pressure, and increasing the pressing pressure to the prescribed pressure of >=(T1-T0)×100×9.8×104 Pa at >=200×9.8×104 Pa/s pressure-increasing rate, a second step S2 of raising the temperature of the thawed food under a prescribed pressure P1 to a food temperature of >=T0 deg.C, and a third step S3 of reducing the pressure for pressing the food from the prescribed pressure P1 to atmospheric pressure. The frozen food is thawed in the process for increasing the pressure to the prescribed pressure P1 at the first step S1 because the state line of the food crosses the crystal limiting line.
