METHOD FOR PRODUCING JUICE OF HIGH CAROTENOID CONTENT

PROBLEM TO BE SOLVED: To provide a method for producing juice containing high carotenoid content by squeezing citrus fruits to a prescribed content. SOLUTION: This method for producing juice of high carotenoid content is characterized by comprising squeezing and filtering (sieving) citrus fruits to obtain regimented part through heavy centrifugal separation, diluting the resultant regimented part with water followed by separating the resultant juice into a regimented part and a supernatant through light centrifugal separation, and appropriately mixing the supernatant with concentrated juice or ordinary juice either directly of after concentration; whereby adjusting the carotenoid content of the objective juice to a given level; thus easily and efficiently preparing the fraction of high carotenoid content.
