SOLUTION: This low-temperature cooking apparatus is equipped with a cooking container 3 for storing a vacuum-packed material obtained by subjecting a foodstuff to vacuum packaging, a heating mechanism 4 having a heating channel for heating water to be fed to the cooking container and circulating hot water between the cooking container and the heating mechanism, a cooling mechanism 5 having a cooling mechanism for cooling water to be fed to the cooking container and circulating cooled water between the cooking container and the cooling mechanism and a controller 6 for controlling the heating mechanism and the cooling mechanism.
