PROBLEM TO BE SOLVED: To obtain mold cheese having an excellent flavor and a cheese flavor prepared from the mold cheese. SOLUTION: A milk raw material prepared to have <=15 wt.% milk solids- not-fat and >=65 wt.% fat content is inoculated with a mold and fermented to give the mold cheese having an excellent flavor without carrying out complicated operations such as a complex culture control, a reaction control of added enzyme, purification of the enzyme from the mold, etc. This cheese flavor having an excellent taste is obtained by collecting the oil phase of the cheese. |
