Device allows adjustment of a forced air flow descending (7) in a cooling or freezing tunnel (1), causing jets of air (8) on the granular products to quickly freeze individual grains or pieces. Device has fairing (5) fixed to the exit of the evaporator, this fairing having on its lower part close to the products (4), corners (8) with spacing (10) which is modifiable as a function of the densities of the quickly frozen grains or pieces. The frozen pieces or grains are moved on a conveyor belt (9) in the tunnel.
