A process for preparing 5-substituted-2(5H)-furanones of the general formula (I) wherein R<1> is hydrogen, optionally substituted alkyl, optionally substituted aryl, or optionally substituted aralkyl; and R<2> is optionally substituted alkyl, optionally substituted alkenyl, or optionally substituted aralkyl, characterized by reacting a compound of the general formula (II) wherein R<1> is as defined above; and X is halogeno with an alcohol of the general formula (III) wherein R<2> is as defined above under nonaqueous conditions in the presence of a base selected from the group consisting of lithium carbonate, sodium carbonate, calcium carbonate, sodium hydrogencarbonate, and potassium hydrogencarbonate.
