A mixture containing water, methanol and one or several organic substances is separated into two or more fractions by a continual or intermittently-operated distillation process carried out in a column. Additional water or methanol is injected into the column at any point, or the mixture itself is enriched with methanol or water. A first fraction of variable purity is drawn from the head or the kettle of the column. A second fraction is drawn from the other end of the column. The mixture making up the second fraction is separated into its basic components by a further distillation stage. The first fraction is an aqueous or methanol fraction. The second fraction is an organic fraction.
