PURPOSE: A process for preparing noodles such as iced vermicelli and Chinese noodles or zolmyun(a kind of Korean noodle) using a ginkgo nut is provided by mixing wheat flour, purified salt and starch or buckwheat flour and adding a ginkgo nut grinded in a fruit juice state, thereby, the titled noodles containing an effective component of ginkgo is produced. CONSTITUTION: The titled noodles are prepared by mixing 70 to 95% by weight of wheat flour, 2 to 5% by weight of purified salt, 10 to 20% by weight of starch or buckwheat flour and 0.5 to 30% by weight of a ginkgo nut grinded in a fruit juice state, forming, cutting to a size of about 30 to 40cm, and drying for about 10hr. The final product does not stick each other easily as compared to conventional noodles using only wheat flour. |
