摘要 The proposed process for preparing breadcrumbs intended for heat treatment is characterized by supplying in an extruder a mixture formed by ground cereals, reducing sugars and fat source in such an amount that the final product contains, 8 to 12 percent by weight of fat. Subsequently the mixture is extruded and simultaneously heated to a temperature ranging from about 150 to about 230 degC under a pressure exceeding 4.5 MPa and finally the extruded product is ground and the ground product is dried.
