PURPOSE: A method for preparing Kimchi is provided, which is capable of preserving Kimchi for a long period time by chloride-treating and enzyme-treating platinum and mixing the organized platinum with Kimchi spices. Whereby, the obtained Kimchi shows excellent preservation as compared to conventional Kimchi. CONSTITUTION: Organized platinum obtained by chloride-treating platinum and enzyme-treating is mixed with ozone-treated vegetables and conventional Kimchi spices to produce the titled Kimchi. For an example, a Chinese cabbage is washed and cut at 3 to 4cm, preserved in salt water in a weight ratio of 2:1, ozone-treated, mixed with conventional Kimchi spices and then added with organized platinum in a ratio of 0.5 to 1.0g per 1kg spices.
