PURPOSE: Provided are a medicinal kimchi additive and a method for manufacturing kimchi using the same. The manufactured kimchi keeps its characteristic taste and flavor for a long time with suppressing acidification. CONSTITUTION: A medicinal kimchi additive is characterized by mixing 5% of Gastrodia elata, 20% of oyster powder having 320-380 meshes, 20% of Siegesbeckia glabrescens MAKINO., 7% of Poria cocos, 7% of Crataegus Pinnatifida Bunge, 2% of sulfur, 3% of Actinolite and 36% of water; and decocting the mixture thereof to obtain the liquid extract thereof. |
