The present invention relates to cultured dairy products containing exogenously added protein and optionally exogenously added dietary fibres and methods for preparation thereof. The methods comprise the steps of i) hydrating a protein source by subjecting it to shear forces and if necessary to heat in the presence of excess of water, ii) adding the hydrated protein source from step i) to a milk composition, iii) adding a fermentation culture to the mixture from step ii), and iv) fermenting to obtain a cultured dairy product. The shear forces are preferably applied by use of a homogenizer at a temperature of 80 DEG C. The exogenously added proteins are preferably soy proteins and the exogenously added dietary fibres are preferably soy fibres, more preferably soy cotyledon fibres. The cultured dairy products preferably contain exogenously added protein in an amount of at least 5 weight percent. |
