Heat treatment of heat sensitive liquids, especially milk, using steam, involves low dwell time at high temperature in between heating and cooling

The liquid is quickly heated to a temperature of 160-180 deg.C and then immediately supplied to the cooler (7), where it is quickly cooled, so that the liquid is maintained at this temperature for ca. 0.1-0.2 s. A method for the heat treatment of a heat-sensitive liquid comprises directly heating the liquid with steam inside a heater (1), and passing the heated liquid through a hot holding area (5) and a flow resistance device (6) into a cooler. The liquid is quickly heated to a temperature of 160-180 deg.C and then immediately supplied to the cooler, where it is quickly cooled, so that the liquid is maintained at this temperature for ca. 0.1-0.2 s.
