A removal channel (14) for waste pieces (23) leads into the top of the waste tray (4). The blade (12) extends in a horizontal direction above the opposite side of the channel to the waste tray. A cutting device for removing at least part of the stem of a vegetable, e.g. mushrooms, comprises at least one blade, a waste tray for collecting the waste pieces cut off, and a collection tray for the cut vegetables (6). A removal channel leads into the top of the waste tray and the blade extends in an essentially horizontal direction above the opposite side of the channel to the waste tray.
