PROBLEM TO BE SOLVED: To precisely grasp the degradation degree of wine without relying on a sensory test. SOLUTION: A lipid membrane is formed in a prescribed thickness in such a way that a polymer material, a lipid which is contained in a ratio of 0.017 to 0.69 mmol with reference to about 800 mg of the polymer material and which has a positive electric charge and a plasticizer are mixed. The lipid membrane comprises remarkable selection responsivity to an astringent taste. By using the lipid membrane, the wine is measured, and its degradation is judged.
