PROBLEM TO BE SOLVED: To obtain high-purity theanine safe to the human body from glutamic anhydride as a starting substance by a fewer processes inexpensively in a high yield. SOLUTION: Z-Glutamic acid anhydride obtained by protecting the amino group of glutamic acid with a benzyloxycarboxyl group (Z group) and a mixed solution of ethylamine hydrochloride and triethylamine or sodium hydrogencarbonate are added to dimethyl sulfoxide to synthesize Z-γ-ethylamide glutamate acid and the Z group of the obtained Z-γ-ethylamide glutamate is eliminated by catalytic reduction.
