PROBLEM TO BE SOLVED: To provide a method for producing a block cheese capable of becoming a scaly cheese easily. SOLUTION: This block cheese capable of becoming the scaly cheese on collapsing is obtained by freezing with thawing a matured material of a cutting cheese curd adjusted as having 38-48 wt.% water content and >=30% degree of maturation. The method for producing the block cheese capable of becoming the scaly cheese on collapsing is provided by cutting the curd, removing whey to adjust 38-48 wt.% water content, performing its maturation to adjust >=30% degree of maturation, and freezing with thawing. The scaly cheese is obtained by crushing such the block cheese. The scaly cheese can be utilized as similar to shredded cheese.
