PURPOSE: A process for extracting collagen and removing chromium from waste leather, thereby producing high value added collagen which is free from chromium. CONSTITUTION: A process for extracting collagen and removing chromium from waste leather comprises the steps of: (1) dipping waste leather in a strong alkali solution having pH 10 or more; (2) adding strong acid into the strong alkali solution for solubilization and neutralization of the waste leather; (3) determining viscosity of protein dissolved in the waste leather solution during the solubilization and neutralization processes; and (4) carrying out the solubilization and neutralization of the waste leather at 20 deg. C or less, wherein the viscosity of the dissolved protein is determined by the Oswald method.
