<p>The cheese press consists of a first component with a side wall and a perforated base, designed to be inserted with a slight clearance in the mould containing the cheese so that its base rests on the cheese, a second component with its lower part fitting at least partly inside the first and able to move axially, and an elastic element between the two components. The elastic element is in the form of a corrugated ring of an elastomer material with corrugations of a constant pitch and has a predetermined hardness, and is fitted so that a pressure exerted on the second component is transmitted to the cheese via the first component at a virtually constant value regardless of the height of the cheese. In addition, the first and second components are designed to clip together by means of claws on the inner one engaging with holes in the outer one.</p> |
