L-Glutamic acid is prepared by contacting an aqueous solution of hydantoin-propionic acid or an alkali metal salt, alkaline earth metal salt, organic base salt, ester or amide thereof at a pH of 6 to 11 with an enzyme of microbial origin which is capable of hydrolysing hydantoin-propionic acid to L-glutamic acid. Specified enzyme sources are those derived from Bacillus brevis ATCC. 8185, Pseudomonas dacunhae IAM. 1199, Pseudomonas incognita IPR. AHH. 38, Pseudomanas sp.
