PURPOSE: A method for cultivating bean sprouts by using a bean-germinating solution made of powdered yacon, Polymnia sonchifolia, is provided to serve improved flavor and quality of bean sprouts capable of promoting digestion and preventing diabetes. CONSTITUTION: The method includes the following steps of: (i) soaking beans in water for 1-3hr and stacking up the soaked beans in a container; (ii) germinating the beans for 24hr by spraying the germinating solution composed of 70-90wt% of water and 10-30wt% of powdered yacon for 1-3min every 4-6hr; (iii) growing the germinated beans in the dark room for 7days to 10cm in height. |
