PURPOSE: A method for substituting nitrate and nitrite, which are used for coloring and enhancing a stability in the manufacturing of processed goods, using chitosan, is provided to eliminate toxicity and production of nitrosamine caused by adding nitrate and nitrite, thereby maximizing the stability of foods. CONSTITUTION: A method for substituting nitrate and nitrite using chitosan is composed of the following steps: (a) dissolving oligosaccharide having a molecular weight of less than approximately 1,000, and chitosan and water-soluble chitosan derivatives having a molecular weight of less than approximately 20,000 in water; (b) dissolving chitosan having a molecular weight of from 20,000 to 500,000 in organic acids; (c) adding the chitosan from (a) and (b) in ratio of 0.001-5 % based on total weight of the food into the food and then mixing them.
