摘要 An anti-inflammatory composition in partially purified form, wherein said anti-inflammatory composition is present in an egg product by an avian, has a molecular weight of less than about 3000 Daltons, is heat stable, is orally active, is resistant to degradation by digestive enzymes and contains less than 10% by weight sialic acid. The composition is obtained by defatting a whole egg, egg-yolk or egg while; isolating a water-soluble fraction from the defatted egg; separating a less that about 300o Daltons permeate from the water soluble fraction and isolating said partially purified anti-inflammatory composition from the permeate.
