摘要 PURPOSE: A method for preparing a crust of overcooked rice using glutinous rice and peanuts is provided. Thereby, one can enjoy an improved crust of overcooked rice added of the taste and aroma of glutinous rice and peanuts as a good snack, and the prepared goods can be preserved safely over 6 months by vacuum pack in cool-storage room. CONSTITUTION: A method for preparing a crust of overcooked rice using glutinous rice and peanuts comprises the steps of: (i) adding dried peanuts 10g, water 100ml, salt 0.01-0.1g to water-soaked glutinous rice 100g, and mixing; (ii) boiling in a cooker, and then heating with weak fire to overcook the bottom; (iii) drying out at 50-60deg.C; (iv) frying in 150deg.C of cooking oil for 2 minutes, and then spreading evenly sugar. Glutinous rice can be substituted with the mixture glutinous rice and regular rice of 80:20.
