PURPOSE: A method for preparing a smoked chicken to smoke chickens in bamboo pipes is provided. Thereby, this method has some merits that (i) one can use normal fuels such as firewood, LPG or LNG, (ii) the meat of chickens do not touch fire directly, and bamboo pipes prevent the fat of chickens from reducing rapidly, and (iii) the aroma of bamboo soaks into chicken meat. CONSTITUTION: A method for preparing a smoked chicken using bamboo pipes comprises the steps of: (i) cutting the upper and the down parts of bamboo from the datums of bamboo's joints to make into "U" shape; (ii) putting chicken meat coated with flour and seasonings into prepared bamboo pipes, and then wrapping with aluminium cooking foil; (iii) putting the pipes containing meat into a furnace, and setting up props(041) under the open parts of bamboo pipes; (iv) smoking chicken meat(011) in bamboo pipes(012) for one or one and half hours while rotating the pipes. |
