PROBLEM TO BE SOLVED: To provide a method for effectively manufacturing locus bean gum of high purity and excellent in heat stability, which is co-treated with a purified carrageenan, and to provide locus bean gum co-treated with purified carrageenan having a high gel strength. SOLUTION: When carrageenan is co-treated with locust bean gum, the purification is carried out under adjusting the pH value of the solution to 7.5-9.0 on the processes from extraction to dehydration. The carrageenan is preferably kappa carrageenan.
