PROBLEM TO BE SOLVED: To provide a method for producing wheat flour containing a low allergen by decomposition-treating the allergen in the wheat flour by using enzymes. SOLUTION: This method for producing the wheat flour containing the low allergen is characterized by mixing the wheat flour with a carbohydrase for hydrolysis-treating carbohydrate-based allergen contained in the above wheat flour and then treating with a protease for decomposing protein-based allergen.
