PROBLEM TO BE SOLVED: To provide a heating cooker by which a food can be skillfully and deliciously roasted without being scorched to obtain a good food by automatically discriminating a cooking object material which has been processed with a seasoning in advance. SOLUTION: Heating means 4, 5 for heating the cooking object material contained in a chamber of the cooker, a temperature sensing means 10 for sensing temperature in the chamber of the cooker, a gas sensing means 13 for sensing a volatile substance emitted from the cooking object material and a controlling means 14 for controlling them are provided. Thus, the cooking object material can be cooked by employing an optimum cooking heating pattern.
