Diced raw potato coated with liquid starch and turned in rotating drum prior to frying

In a process to apply a coating of starch to chips ('French fries'), the rod-like chips are transported through a drum. The chips are orientated transverse to the direction of motion and are turned and/or stirred at least once during their passage through the drum. The starch coating is diluted in water and introduced to the drum with the chips. An Independent claim is also included for a drum coating assembly from which the chips are discharged after full coating with the starch fluid. Excess fluid is drained from the discharged chips and re-used. Both the chips and fluid are introduced to the drum via a chute. Alternatively, starch is introduced to the drum in dry powder form. Coating with dissolved or powdered starch takes place at 6 deg C. The chips are subsequently fried. The rotating drum inner wall has a number of projections which advance the chips from inlet to outlet.
