<p>The invention is related to a process for producing cyclodextrin by cyclodextrin glucanotransferase (EC 2.4.1.19.), extracellularly produced by a novel alkalophilic bacterium Bacillus circulans B-65. Cyclodextrin glucanotransferase from B. circulans B-65 is characterized by high degree of conversion of starch to cyclodextrins and it is specific for β-cyclodextrin formation.</p> |
