The invention relates to a method for preserving, storing and/or transporting fresh products such as flowers, fruits, meat, shellfish and fish in chambers and containers (1) and to a system for said purposes. The invention is characterized in that it uses two cooling stages: a rapid stage in which a conventional evaporator (3) is used and a slow and very stable stage in which natural convection (4) slow cooling plates are used. Preferably, said plates (4) also have high thermal inertia material which absorbs possible thermal waves generated in the cooling circuit (5) that cools said waves by means of condenser (2). Preferably, the entire system is controlled by a central unit (10) by means of a set of valves (6), sensors (7,8 and 9)and relays.
