<p>Disclosed is a method of efficiently aerating yeast prior to pitching. In the method, yeast are aerated in an aqueous sugar (e.g. sucrose or fructose) solution containing zinc. The yeast thus obtained is transferred to a suitable volume of fermentation medium (in particular wort) having a gravity similar to the gravity of the sugar solution, for preparing a fermented beverage such as beer.</p> |
