PROBLEM TO BE SOLVED: To provide both a hot-air drying chamber for a rice cracker dough capable of preventing occurrences of displacements of frame members constituting a skeleton, fitting positions of rails and fitting angles as much as possible and further extremely saving an assembly time on site and a method for assembling the hot-air drying chamber. SOLUTION: In constituting a hot-air drying chamber for a rice cracker dough, showing a long box shape, by forming a grandeur skeleton for housing wire net conveyors of a plurality of stairs in the interior and fixing heat insulating panels to the outside of the skeleton, skeleton structures formed by connecting a plurality of frame members, each composed of a pair of struts forming the skeleton and a plurality of reinforcing crosspiece members laid between the struts at fixed intervals in the vertical direction, mutually in the length direction by chain transportation rails of the wire net conveyors of the plurality of stairs and fitting heat insulating panel fitting members to the sides of the connected frame members are previously made. The skeleton structures are transported to a site. On the site, the skeleton structures are successively connected in the length direction to constitute the skeleton and the heat insulating panels are fixed to the outside of the skeleton.
