PROBLEM TO BE SOLVED: To attain stably preventing harvested plants (e.g. cut vegetables) from getting brown, and preventing human skin from getting dark due to sunburn. SOLUTION: This method for screening vegetable browning inhibitors comprises adding a test substance to a system of reaction between a substrate extracted from an object plant and a browning enzyme extracted from the identical plant.
