PROBLEM TO BE SOLVED: To provide a fryer by which no large-scale exhaust duct arranged in the factory is required and the soot rising from the heating oil bath during operations can be reliably removed. SOLUTION: The fryer of a foodstuff deep-frying machine by which foodstuffs can be deep-fried in a heating oil bath 1 is provided with an air blowing outlet 5 arranged on one side of the heating oil bath 1 and an air drawing inlet 4 arranged on the side of the heating oil bath 1 opposite to the air blowing outlet 5. In this case, the width of the air blowing outlet 5 and that of the air drawing inlet 4 is approximately equal to the width of the heating oil bath 1 and the quantity of airflow of the air blowing outlet 5 and the air drawing inlet 4 is set in such a way that the quantity of the drawn air is about 10-20 time as much as the quantity of the airflow from the blowing outlet 5. Further, the air drawn through the air drawing inlet 4 is circulated to the air blowing outlet 5 after removing the contaminants such as oils, dust and the like.
