PROBLEM TO BE SOLVED: To solve such problems that a constitution for enabling the sure mounting of a sensor on a material to be baked with a simple constitution is provided and a response to a hazard analysis and control point (HACCP) method can be made in relation to a rack oven for rotating a rack in a baking chamber and carrying out the baking with hot air. SOLUTION: This rack oven is obtained by installing a backing chamber 15 provided with the rack 20 housing a material 16 to be baked therein, a rack rotating mechanism 30 for rotating the rack 20 in the baking chamber 15, a hot air feeding mechanism 50 equipped with a heating device 15 and a circulating fan 53 and capable of producing the hot air and feeding the produced hot air into the baking chamber 15 and a temperature sensor 17 inserted into the material 16 which is to be baked and housed in the rack 20 and capable of measuring a temperature change in a baking process, further providing a rotation connector 34 in the rack rotation mechanism 30 and affording a constitution for drawing out wirings 18A from the temperature sensor 17 through the rotation connector 34 to the outside of the baking chamber 15.
