PURPOSE: Provided are yacon tofu and a manufacturing method thereof to make the balance of nutrition by adding yacon that is effective in digestion acceleration and diabetes prevention to tofu. CONSTITUTION: The method for manufacturing yacon tofu comprises the steps of: washing 10kg of soybeans and swelling in a water tank for 10 hours; putting 15g of silicon resin-mixed detersive as an antifoaming agent with swollen soybeans in a crusher for grinding as adding water. The ground liquid is separated into soybean liquid and soybean dregs; heating the soybean liquid in a vacuum pot at 100deg.C for 10 minutes; mixing the heated soybean liquid with powdered coagulant made from calcium sulfate in a coagulating tank and adding yacon powder 50g in to be 10% of tofu solid concentration and to make 70kg of soybean liquid; placing and aging the made silken tofu for 10-20 minutes; putting and compressing the aged tofu in a mold; cooling the formed tofu in water to eliminate the residue of the coagulant. |
