<p>A process aiming at facilitating the separation of precipitate after enzymatic digestion of soybean protein, thereby improving the yield of the enzymatic digestion product, and thus providing a pasteurized soybean protein digestion product which causes no lees when used in drinks, etc. This process is characterized by comprising hydrolyzing a soybean protein solution by adding a protease thereto, heating, cooling to thereby eliminate the insoluble matters, and heating the thus obtained supernatant.</p> |
