PURPOSE: A method for producing high molecule water-soluble chitosan and its composition useful for prevention and treatment of sterility by reducing body fat are provided, therefore, it can be used for foods and medicines for reducing body fat as well as treating pregnancy problems. CONSTITUTION: The method for producing high molecule water-soluble chitosan comprises the steps of: treating chitosan from the shells of shrimps and crabs with acids; treating the chitosan with 0.1 to 15 wt.% of enzyme selected from chitosinase, chitinase, cellulase and lysozyme, along with applying ultrasonic wave for 20 to 90 minutes; drying and dissolving the chitosan in fresh water to produce the chitosan having 220,000 to 1,000,000 molecular weight; and freeze-drying the chitosan to produce high molecule water-soluble chitosan. The composition useful for the prevention and treatment of sterility by reducing body fat comprises the high molecule water-soluble chitosan in an amount of 0.001 to 100%.
