PURPOSE: Provided is a method for preparing modified starch which has excellent dispersing and cooking properties in processing, and uses an ohmic heating device capable of heating transiently by means of high voltage. CONSTITUTION: The method of preparing the modified starch comprises the step of stirring at rate of 50 to 200rpm various starch or suspension containing starch-containing material in 2 to 25wt% (w/v) of final concentration, alone or in the presence of electron-transfer medium, and simultaneously heating and cooling at rate of 0.5 to 100 deg.C per minute. The starch-containing materials contain cereal or bean. The electron-transfer medium contains sodium chloride (NaCl). If the starch-containing materials are used, the method contains further drying and grinding steps.
